Cauliflower Soup with Cracker Crumbs

What’s better than a bowl of delicious soup? Soup topped with cracker crumbs.

Cauliflower soup has always been one of Mette’s favourites and making it in a Thermomix is a dream!

INGREDIENTS

1 onion, roughly chopped
800g cauliflower, cut into florets
2 tablespoons vegetable stock paste
600g water
Salt to taste
2 tablespoons flour
20g olive oil
20g butter
Nutmeg to taste
Chopped parsley to serve
Mette is Baking cracker crumbs to serve

METHOD

  1. Place the cauliflower, onion, water, stock paste and salt into Thermomix and cook for 15 minutes on Varoma temperature, speed 4. Or place the ingredients into a pot on the stove and bring to the boil, then simmer for 15 minutes.

  2. Add flour, oil, butter and nutmeg and cook for a further 5 minutes on Varoma temperature, speed 4. Or continue simmering the soup mixture on the stove for a further 5 minutes.

  3. Blend until smooth. Serve with chopped parsley and Mette is Baking cracker crumbs.
