The Perfect Scandi Breakfast - Poached Eggs

I am a great believer in fuelling my body with nutritious food that is quick and simple to make, but is so delicious.

A favoured Scandinavian breakfast is one which is highly nutritious and is filled with protein and wholegrains as it can really help set the tone for the day - plus is helps keep you fuller for longer!

This Scandi inspired breakfast created by Kate Flower and photographed by Jessica Wyld ticks all the boxes - high in protein, full of healthy fats and wholegrains, it’s quick and simple to make and only requires a handful of ingredients. You can have this on the table in under 10 minutes.

Combining creamy avocado, perfectly poached eggs and a sprinkle of Mette is Baking’s Scandi Summer Dip Mix - you’re in for a real treat.

A hearty blend of avocado, eggs, herbs and spices

To craft the perfect Scandi Breakfast, start with your choice of bread, which sets the foundation. Whether you opt for hearty rye, a nutritious seeded grain or a rustic sourdough, you can’t go wrong.

The creamy avocado is designed to be layered generously in this recipe, while the runny yolks of the perfectly poached eggs, will intertwine the flavours and will create a delectable contrast of textures.

But here’s where the magic happens and everything is tied together with a sprinkle of Mette is Baking’s Scandi Summer Nordic Dip Mix. This all-natural spice mix not only enhances the natural flavours of the avocado and eggs, but the citrus notes and gentle heat of the pepper create something that’s truly comforting.

INGREDIENTS - Serves 2

2 x slices of bread of choice
1 avocado, sliced
4 eggs
2 teaspoons Mette is Baking Scandi Summer Dip Mix

METHOD

  1. Fill a medium-sized saucepan with about 5cm of water and bring to the boil on the stove. Then turn the heat down to a gentle simmer. Crack one egg at a time into a small bowl and lower the bowl as close to the surface as possible before gently tipping the egg in. Repeat this process with the remaining eggs, but keep some distance between the eggs in the pan. Turn the heat off. Cover the pan with a lid and set the timer for 4 minutes, the whites of the eggs should be cooked, while the egg yolks are still runny.

  2. Meanwhile, toast the bread slices and place the toast on serving plates. Add the sliced avocado to each piece.

  3. Using a slotted spoon, gently life the poached eggs out of the pan one at a time and place on top of the avocado.
