Grilled Nectarine with Goat Chevre

Entertaining guests at home is something I really enjoy doing. I love to serve delicious foods we can all share together, from grazing platters, to appetisers, main meals and desserts. I think there is something special about being together with family and friends, sharing a meal and enjoying one another’s company.

This recipe is one of my favourites, especially in Summer when nectarines are in peak season and when they are especially ripe and juicy. This flavourful stone fruit is really something extra special when it is lightly cooked on a hot plate, topped with crispy ham pieces, goat chevre and our Nordic cracker crumbs.

The saltiness from the ham, the creamy goodness of the goat chevre and the savoury crunch of our Nordic crackers all work together to compliment the sweet nectarines.

Plus, this delicious appetiser can be whipped up in just minutes, no mess and no fuss, but is sure to leave a lasting impression on your guests. It really is the perfect start to your next dinner party, summer barbeque or casual get-together.

INGREDIENTS - Serves 4

Mette is Baking Nordic crackers
4 Nectarines
Serrano ham, finely sliced
Goat chevre
Olive oil

METHOD

  1. Break Mette is Baking Nordic crackers into small pieces and set aside.

  2. Cut and stone nectarine halves, place on a plate skin side down and drizzle with olive oil.

  3. Heat a frying pan or barbeque plate to hot and fry ham until crisp. Remove from the frying pan or barbeque hot plate and allow the nectarine to cool on paper towel. Once cooled, crumble.

  4. Sit the nectarines on the hot frying pan or barbeque plate and cook for approximately one minutes, then turn and cook the other side.

  5. Transfer the nectarines to a serving plate cut-side-up and top each half with spoonfuls of the goat chevre. Sprinkle the top of each nectarine half with Serrano ham and Mette is Baking Nordic crackers. Drizzle with a little more olive oil and sprinkle with cracked black pepper. Enjoy!
